Austin’s journey with gelato began over 20 years ago, sparking a delightful exploration of ice-cream making through joyful kitchen experiments for the family. What started out as a fun project transformed into a mission incorporating bold flavours, textures, and sharing happiness.

With a culinary background familiar with international cuisines, Austin honed a keen palate for flavour pairing, blending ingredients in creative ways that celebrate both authenticity and innovation.

At GPops, we are committed to using Victoria’s finest dairy, supporting the local farmers and supporting local producers for our chocolates, fresh produce and most main ingredients in our production.

With extensive experience in the hospitality industry, our mission is to assist businesses in introducing gelato in a more manageable, convenient and fun format. As a small-batch, handcrafted gelato producer, we are nimble with fast turnaround and work closely with businesses in elevating their brand, their menu with customisation in mind.
